Hillstone-inspired Kale Salad

I love salad. Okay, not just any salad, but a GOOD salad. So, NO to a bowl of lettuce with a few tomatoes but YES to the Emerald Kale & Rotisserie Chicken salad from Hillstone restaurant. I could seriously eat it every day. Unfortunately, I cannot go to Hillstone every day. So I decided to make my own version!

Start by chopping the kale and cabbage. (I know some of you are anti-kale, so feel free to use spinach or whatever your favorite salad base is.) Throw in the parmesan and mix it all together. Next, layer the remaining ingredients. 1. Because it looks really pretty and 2. You’ll cover all the main ingredients with the dressing before you mix the salad.

The dressing is easy. It’s a vinaigrette, so you just mix everything together and drizzle it over the salad and you’re done!

This salad is SO easy and SO yummy. I could literally drink the dressing!

Salad

1 bunch of kale
½ cup green cabbage
¼ cup parmesan
½ – ¾ cup roasted sunflower and pumpkin seeds
Rotisserie chicken
Sliced avocado

Peanut Vinaigrette Dressing

¾ cup peanut oil
¼ cup rice vinegar
½ tsp sesame oil
1 lemon juiced
2 tsp honey
1 tsp black pepper
1 tsp Dijon mustard
1 tsp Worchestershire sauce
1-2 Tbsp soy sauce
1 tsp water
1 tsp minced garlic

And that’s it! Healthy, easy and yummy!
