Crock Pot Chocolate Lava Cake

I’m going to go ahead and give you advance warning. This is totally a “Treat Yo Self” recipe. I’ve been hitting the no-carb thing pretty hard, but every once in a while, a girl deserves a treat. And this crock-pot chocolate lava cake is the perfect splurge!

I love this recipe for a few reasons:

A) it’s decadent
B) it looks super complicated even though it’s not and
C) CHOCOLATE!

Chocolate Lava Cake

-1 box chocolate cake mix

-1 ¼ cup milk

-1/2 cup vegetable oil

-3 eggs

-1 box instant chocolate pudding mix

-2 cups milk

-1 bag milk chocolate chips

Spray your slow cooker with cooking spray. Combine the cake mix, milk (1 ¼ cup), vegetable oil and eggs, and beat with an electric mixer. In a medium bowl, beat the pudding mix and milk (2 cups) with a whisk. Pour the pudding mixture into slow cooker over the cake batter and then sprinkle chocolate chips on top. Cook on low for 2 ½ or 3 hours. Spoon cake into a martini glass and top with ice cream or whipped cream and your favorite berries.

It looks super fancy when you put it in a martini glass and it’s just the right size serving, as the cake can be a little rich! Life is all about balance so don’t forget to treat yourself once in a while, y’all!
