Chicken Quinoa Primavera

Sunday dinners with friends are a standard at Casa de Caroline, but I’ve been crazy busy and just haven’t been able to coordinate schedules lately. But last week, I decided I was going to make it happen, no matter what! I invited my friend Jack over and whipped up a Caroline Contessa fave!

If you missed my “Caroline Contessa” Snapchats the other night, this one is delicious and super easy! It’s Chicken and Quinoa Primavera and if you’re leery of quinoa, I promise you’ll love this! The quinoa turns out to be almost like a risotto and it’s so yummy, my friends canNOT believe I don’t add any cream or cheese to this recipe!

Also, the pesto recipe is one I always try to have on hand. Pesto is great to add to chicken, pasta or veggies, so it’s one of my recipe staples!



In the crockpot

-1 ½ cups quinoa
-1 lb boneless skinless chicken breasts
-4 cups + 2 or 3 extra cups chicken broth
-4-6 cloves garlic


Put quinoa, chicken breasts, 4 cups of chicken broth and 4-6 cloves of garlic in the crockpot. You can either cut the chicken breasts into bite size pieces or leave the chicken whole and shred it when it’s ready. Cook in the crockpot on low for 3-4 hours.

-2 cups basil
-2 cloves of garlic
-1/4 cup pine nuts
-2/3 cup extra-virgin olive oil
-1/2 cup Pecorino cheese, grated

Use a food processor or blender to blend everything together except the olive oil and cheese. Gradually add the olive oil as you continue to mix everything together. Right before serving, add the cheese.

To add in before serving

-1 tablespoon olive oil
-1 bunch asparagus, cut into small pieces
-1 bag frozen peas
-Squeeze of fresh lemon juice
-Grated Parmesan for topping

Sauté asparagus in olive oil until tender. Add asparagus into crockpot along with the peas. Put that pretty pesto in as well and top with lemon juice. Mix together and serve with Parmesan cheese!
