Caroline Contessa - Chicken Tortellini Soup

IT IS OFFICIALLY FALL!!! At least according to the calendar. The Texas weather is still a little slow to catch up! I may have to wait another month before I start breaking out my sweaters and boots, but I am ready for fall recipes. And I’m justifying this by the fact that when I left the house this morning, the temperature was in the 50s!! Never mind the fact it’ll be in the 80s again next week. Let’s focus on right now. Right now, it’s fall and that means soup weather. Chicken Tortellini Soup!

Chicken Tortellini Soup is a fave because it’s quick, easy and fairly healthy! And anything I can throw in a crock pot and have dinner waiting when I walk in the door is a win! If I’m really good, I can pretend my husband cooked dinner for me! No? Okay, whatever. But it’s still a yummy recipe that doesn’t take long to prepare!

Ingredients

 

  • 1 pound boneless chicken breast
  • 3 stalks celery (chopped)
  • 2 large carrots (chopped)
  • 1 chopped onion
  • 3 Tbs garlic
  • 1 Tbs Italian seasoning
  • 6 cups low-sodium chicken broth
  • 1 cup water
  • 2 cups cheese tortellini
  • salt and pepper to taste
  • Parmesan cheese to taste

 

Directions

Add all ingredients except tortellini to the slow cooker.

Cook on low for six hours.

Remove the cooked chicken and shred and add back to slow cooker.

Add in tortellini and cook for 15 minutes or until cooked thoroughly. Season with salt and pepper, serve and top with Parmesan cheese and enjoy!
