Caroline Contessa: Pizza Chicken


-4 chicken breasts

-1 tbsp olive oil

-1 jar of your favorite marinara sauce

-1/2 cup slice black or green olives

-1 cup shredded mozzarella

-1/4 cup basil, torn

-salt, pepper, garlic powder or any other Italian seasonings


Preheat your oven to 425 degrees. In a large, oven-proof skillet, heat olive oil. Season chicken with S&P and any other Italian seasonings you like. Sear chicken for 2-3 minutes on each side until golden brown. Pour tomato sauce on top of chicken and follow with green/black olives (I prefer green) and mozzarella cheese! Bake for 20 minutes, until chicken is no longer pink and add the torn basil!


I’ve been riding the low-carb train recently and it is really hard, but it works for me. So when I crave pizza or Italian food, this is a way for me to get my fix without straying from my diet! It’s super easy to make and you can make a yummy green veggie (my favorites are brussels or broccoli…yay fiber!) and a salad and you’re all set for some low carb realness!
