Autumnal Slaw with Apples and Pecans - The Kraddick Kitchen

Hello November!

Halloween is over and I know most people have immediately moved on to Christmas, but first, Thanksgiving! I know, Thanksgiving doesn’t get much love but I’m trying to stay on the healthy eating path, so this year, I’m planning ahead!

Y’all know I’ve been doing the cryotherapy thing for a while now (obsessed.) and through cryo, my friend Kelly introduced me to Cassie Green. Cassie is a health coach and knows all things nutrition! I think one of the hardest things about staying on a good eating plan is constantly coming up with new and yummy things to eat. I started picking Cassie’s brain on some nutrition stuff and then just invited her over to The Kraddick Kitchen so she could give me a few ideas.

I love a good Friendsgiving but I hate to be that person who can’t eat anything because “I’m on a diet”. So Cassie shared a few recipes that are healthy and tasty and the best part is you can enjoy them without the guilt!

Autumnal Slaw with Apples and Pecans

Serves 6 as side dish

Ingredients:
½ head red cabbage, cored and sliced thinly
2 crunchy apples, cored, sliced and cut into matchsticks
2 carrots, peeled and grated
½ red onion, sliced thinly
1/2 cup parsley, minced
1/2 cup pecans, chopped
1/4 cup apple cider vinegar
Juice of 1 lemon
3 cloves garlic, minced
1/2 cup olive oil
Salt and pepper (approx. 1/2 tsp salt, 1/4 tsp pepper)

In dry skillet on stovetop, toast pecans until just fragrant (5-7mins). Stir them frequently to keep them
from burning
Toss cabbage, apples, carrots, onion, parsley in bowl together.
Whisk ACV, lemon juice, garlic, olive oil, S&P together in small bowl.
Sprinkle pecans on top of veggies and dress slaw just before serving.

This slaw is super easy to make and just as yummy. And you won’t have to spend hours in the kitchen. Instead, you can throw this together really quickly and then enjoy Thanksgiving with family and friends!
